Parmentier Egg Casserole with Bacon and Croutons
Ingredients:
- 8 slices of bacon
- 4 cups of croutons
- 1 large onion, chopped
- 6 large eggs
- 1 cup of milk
- 1 teaspoon of salt
- 1/2 teaspoon of black pepper
- 2 tablespoons of unsalted butter
- 1 cup of shredded cheddar cheese
Instructions:
- Preheat the oven to 375°F (190°C).
- Cook the bacon in a large skillet over medium heat until crispy. Remove from the skillet and crumble into small pieces.
- Add the croutons to the skillet and stir to coat them in the bacon fat. Cook for 4-5 minutes or until they are golden brown and crisp. Remove from the skillet and set aside.

- Butter a 9×13 inch baking dish. Spread half of the croutons in the bottom of the dish. Top with the cooked onions, crumbled bacon, and half of the shredded cheese.
- Pour the egg mixture over the top and then sprinkle the remaining croutons and cheese over the top.
- Bake for 30-35 minutes or until the eggs are set and the cheese is melted and golden brown.
