Parmentier Egg Casserole with Bacon and Croutons

Ingredients:

  • 8 slices of bacon
  • 4 cups of croutons
  • 1 large onion, chopped
  • 6 large eggs
  • 1 cup of milk
  • 1 teaspoon of salt
  • 1/2 teaspoon of black pepper
  • 2 tablespoons of unsalted butter
  • 1 cup of shredded cheddar cheese

Instructions:

  1. Preheat the oven to 375°F (190°C).
  2. Cook the bacon in a large skillet over medium heat until crispy. Remove from the skillet and crumble into small pieces.
  3. Add the croutons to the skillet and stir to coat them in the bacon fat. Cook for 4-5 minutes or until they are golden brown and crisp. Remove from the skillet and set aside.
  4. Add the chopped onion to the skillet and cook over medium heat until softened, about 5 minutes.
  5. In a large bowl, whisk together the eggs, milk, salt, and black pepper.
  6. Butter a 9×13 inch baking dish. Spread half of the croutons in the bottom of the dish. Top with the cooked onions, crumbled bacon, and half of the shredded cheese.
  7. Pour the egg mixture over the top and then sprinkle the remaining croutons and cheese over the top.
  8. Bake for 30-35 minutes or until the eggs are set and the cheese is melted and golden brown.
