Parmentier of Beef with Butternut Recipe

Ingredients

  • 1 pound beef, cut into small cubes
  • 1 butternut squash, peeled and chopped
  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • 1 teaspoon fresh rosemary, chopped
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/2 cup beef stock
  • 1 tablespoon butter
  • 2 cups mashed potatoes
  • 1/4 cup grated Parmesan cheese

Direction

  1. Preheat oven to 375°F.
  2. In a large skillet, heat olive oil over medium-high heat.
  3. Add beef, garlic, rosemary, salt and pepper and sauté until browned.
  4. Add beef stock to the skillet, reduce heat to low and simmer for about 10-15 minutes, or until the beef is tender.
  5. In a separate pan, sauté butternut squash with butter until it is soft, then season with salt and pepper to taste.
  6. Transfer the beef mixture to a 9-inch baking dish.
  7. Spread the mashed potatoes on top of the beef mixture, then sprinkle with Parmesan cheese.
  8. Bake the parmentier for 20-25 minutes or until golden brown and crispy on top.

Serving Suggestions

Serve parmentier of beef with butternut hot straight out of the oven with a side of sautéed vegetables or salad. The dish would pair perfectly with a glass of red wine.
