Parmentier of Beef with Butternut Recipe
Ingredients
- 1 pound beef, cut into small cubes
- 1 butternut squash, peeled and chopped
- 2 tablespoons olive oil
- 2 cloves garlic, minced
- 1 teaspoon fresh rosemary, chopped
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/2 cup beef stock
- 1 tablespoon butter
- 2 cups mashed potatoes
- 1/4 cup grated Parmesan cheese
Direction
- Preheat oven to 375°F.
- In a large skillet, heat olive oil over medium-high heat.
- Add beef, garlic, rosemary, salt and pepper and sauté until browned.
- Add beef stock to the skillet, reduce heat to low and simmer for about 10-15 minutes, or until the beef is tender.
- In a separate pan, sauté butternut squash with butter until it is soft, then season with salt and pepper to taste.
- Transfer the beef mixture to a 9-inch baking dish.
- Spread the mashed potatoes on top of the beef mixture, then sprinkle with Parmesan cheese.
- Bake the parmentier for 20-25 minutes or until golden brown and crispy on top.
Serving Suggestions
Serve parmentier of beef with butternut hot straight out of the oven with a side of sautéed vegetables or salad. The dish would pair perfectly with a glass of red wine.
