Parmentier of Cod Recipe
Ingredients:
- 600g cod fillets
- 1kg potatoes, peeled and chopped
- 200ml milk
- 50g butter
- 2 cloves garlic, minced
- 1 onion, chopped
- 1 tablespoon olive oil
- 1 tablespoon flour
- 1 bay leaf
- Salt and pepper
Preparation:
- Boil the potatoes in salted water for 20-25 minutes until they are tender. Drain the potatoes and mash with the milk and butter. Season with salt and pepper to taste.
- Preheat the oven to 200°C.
- Heat the olive oil in a pan and sauté the onion and garlic until the onion is translucent. Add the flour and cook for another minute.
- Add the bay leaf and gradually pour in 400ml of cold water. Bring the mixture to a simmer and cook for 5 minutes until the sauce thickens.
- Add the cod fillets to the sauce and season with salt and pepper. Cook over a low heat for 5-7 minutes until the cod is cooked through.
- Remove the bay leaf from the sauce and discard.
- Divide the cod and sauce evenly into a baking dish. Spoon the mashed potato over the top of the cod mixture.
- Bake in the preheated oven for 20-25 minutes until the top is golden brown and the mixture is heated through.

Serve hot with a side salad or green vegetables such as broccoli or green beans.
