Ingredients

  • 4 large egg whites
  • 1 cup superfine sugar
  • 1/4 teaspoon cream of tartar
  • 1/2 tablespoon cornstarch
  • 1 teaspoon vanilla extract
  • 1 cup heavy cream
  • 1 cup mixed fresh red fruits (such as strawberries, raspberries, and cherries)
  • 1 tablespoon powdered sugar

Instructions

  1. Preheat the oven to 300°F (150°C).
  2. In a clean bowl, beat egg whites using a hand mixer or stand mixer until stiff peaks form.
  3. Gradually add the superfine sugar while beating the egg whites at medium speed. Make sure to add the sugar slowly, one tablespoon at a time. Continue to beat the mixture until it becomes stiff and glossy.
  4. Add cream of tartar, cornstarch, and vanilla extract. Gently fold in using a spatula until fully combined.
  5. Line a baking sheet with parchment paper. Spread the mixture on the parchment paper using a spoon to create a well in the middle, leaving some space around the edges.

  8. Meanwhile, in a separate bowl, beat the heavy cream until soft peaks form.
