Pavlova with Red Fruits Recipe
Ingredients
- 4 large egg whites
- 1 cup superfine sugar
- 1/4 teaspoon cream of tartar
- 1/2 tablespoon cornstarch
- 1 teaspoon vanilla extract
- 1 cup heavy cream
- 1 cup mixed fresh red fruits (such as strawberries, raspberries, and cherries)
- 1 tablespoon powdered sugar
Instructions
- Preheat the oven to 300°F (150°C).
- In a clean bowl, beat egg whites using a hand mixer or stand mixer until stiff peaks form.
- Gradually add the superfine sugar while beating the egg whites at medium speed. Make sure to add the sugar slowly, one tablespoon at a time. Continue to beat the mixture until it becomes stiff and glossy.
- Add cream of tartar, cornstarch, and vanilla extract. Gently fold in using a spatula until fully combined.
- Line a baking sheet with parchment paper. Spread the mixture on the parchment paper using a spoon to create a well in the middle, leaving some space around the edges.
- Bake in the preheated oven for 1 hour or until the pavlova is crisp and dry on the outside, but still slightly soft in the center.
- Remove from the oven and let it cool completely.
- Meanwhile, in a separate bowl, beat the heavy cream until soft peaks form.
- Top the pavlova with whipped cream, then add the mixed red fruits over the cream.
- Dust with powdered sugar and serve immediately.
