Peach jam with vanilla

Peach Jam with Vanilla Recipe

Ingredients:

  • 4 cups peeled, chopped peaches
  • 3 cups granulated sugar
  • 1 tablespoon lemon juice
  • 1 vanilla pod, split and seeds scraped

Instructions:

  1. In a medium-sized saucepan, combine the chopped peaches, granulated sugar, and lemon juice. Stir together well and let the mixture stand for 15 minutes.
  2. Place the saucepan over a medium-high heat and, stirring frequently, bring the mixture up to a boil. Adjust the heat, if needed, to maintain a gentle boil.
  3. Use a candy thermometer to check that the temperature of the mixture has reached 220°F. This temperature ensures that the jam will set properly.
  4. Remove the pan from the heat and stir in the vanilla pod seeds.
  5. Remove the vanilla pod from the jam mixture.
  6. Pour the hot jam into clean, sterilized jars, leaving 1/4-inch headspace. Cover with lids and bands.
  7. Process the jars in a hot water bath for 10 minutes. Remove and let cool at room temperature.
  8. Store in a cool, dry place.

Verdict:

This Peach Jam with Vanilla recipe is an excellent way to preserve fresh summer peaches. The addition of vanilla pod seeds adds a lovely undertone of flavor to the jam. Perfect for spreading on toast, spooning over ice cream, or dolloping onto yogurt.
