Peanut Butter and Chocolate Chip Muffins Recipe

Ingredients:

  • 1 cup creamy peanut butter
  • 1/2 cup granulated sugar
  • 2 large eggs
  • 1 tsp vanilla extract
  • 1/2 cup all-purpose flour
  • 1 tsp baking powder
  • 1/4 tsp salt
  • 1/2 cup chocolate chips

Instructions:

  1. Preheat the oven to 350°F.
  2. In a mixing bowl, cream together the peanut butter and sugar until smooth.
  3. Add in the eggs and vanilla extract, stir until combined.
  4. In a separate bowl, whisk together the all-purpose flour, baking powder, and salt.
  5. Fold the dry ingredients into the peanut butter mixture until fully combined.
  6. Stir in the chocolate chips.
  7. Spoon the batter into a lined muffin tin, filling each muffin cup about 3/4 full.
  8. Bake for 18-20 minutes, or until a toothpick inserted into the center of a muffin comes out clean.
  9. Remove from the oven and let cool for a few minutes before transferring onto a wire rack to cool completely.
