Pineapple and Lime Panna Cotta Recipe
Ingredients
- 1 cup diced fresh pineapple
- 1/4 cup fresh lime juice
- 1 envelope unflavored gelatin
- 2 cups heavy cream
- 1/2 cup sugar
- 1 tsp vanilla extract
Instructions
- In a blender, purée diced pineapple and lime juice until smooth. Strain through a fine-mesh sieve into a measuring cup.
- Sprinkle gelatin over pineapple mixture and let stand for 5 minutes to soften.
- In a small saucepan, heat heavy cream, sugar, and vanilla over medium heat until sugar dissolves.
- Add gelatin mixture to the cream mixture and stir until the gelatin dissolves.

- Divide the mixture among 6 ramekins or glasses. Cover with plastic wrap and refrigerate overnight until set.
- To serve, gently run a knife around the edge of each panna cotta and invert onto a plate.
