Pink Apple Pie
Ingredients:
- 2 large pink lady apples, peeled, cored and sliced
- 1/4 cup sugar
- 1/4 cup brown sugar
- 1 tsp cinnamon
- 1/4 tsp nutmeg
- 1/4 tsp allspice
- 1/4 tsp salt
- 3 Tbsp flour
- 2 Tbsp unsalted butter
- 1 Tbsp lemon juice
- 1 double-crust pie crust
- 1 egg, beaten
- Coarse sugar, for sprinkling (optional)
Instructions:
- Preheat your oven to 350°F (175°C).
- In a large bowl, mix together the sliced apples, sugar, brown sugar, cinnamon, nutmeg, allspice, salt, flour, butter and lemon juice. Stir until the apples are evenly coated with the mixture and set aside.
- On a floured surface, roll out the bottom pie crust and fit it into a 9-inch pie dish. Trim the overhanging dough to about 1/2 inch.
- Pour the apple mixture into the pie dish, spreading it out evenly.
- Roll out the second pie crust and cut it into thin strips (about 1/2 inch wide). Arrange the strips in a lattice pattern over the top of the apple mixture.
- Brush the lattice with the beaten egg, making sure to cover all the dough.
- If desired, sprinkle coarse sugar over the top of the lattice.
- Bake the pie for 45-50 minutes, until the crust is golden brown and the filling is bubbling.
- Remove from the oven and let the pie cool completely before serving.
