Plaice en papillote Recipe

Ingredients

  • 4 x 150g plaice fillets
  • 2 medium-sized carrots
  • 1 small leek
  • 1 courgette
  • 2 garlic cloves, crushed
  • 1 tbsp olive oil
  • 1 tsp dried thyme
  • 1 tbsp chopped fresh parsley
  • Salt and pepper to taste
  • 4 squares of baking parchment (approx. 30cm x 30cm)
  • 4 small knobs of butter

Instructions

  1. Preheat the oven to 200°C/fan oven 180°C/gas mark 6.
  2. Thinly slice the carrots, leek and courgette and divide them into four portions.
  3. Place each portion of vegetables in the centre of each square of parchment paper, and place a plaice fillet on top of each portion.
  4. Sprinkle the garlic, thyme and parsley over each plaice fillet and season with salt and pepper.
  5. Drizzle each fillet with olive oil and place a knob of butter on top.
  6. Starting from one end, fold the parchment paper over to encase the fish and vegetables, tucking the edges underneath to seal.
  7. Place the parcels on a baking tray and bake in the preheated oven for 12-15 minutes, until the fish is cooked through and the vegetables are tender.
  8. Serve the plaice en papillote in the parchment paper so that the flavours and aromas are released when opened at the table.
