Ingredients

  • 4 large eggs
  • 4 slices of bacon
  • 4 slices of bread
  • 4 tbsp. mascarpone cheese
  • 2 tbsp. white vinegar
  • salt and pepper to taste
  • butter for toasting

Instructions

  1. In a large skillet, cook the bacon over medium heat until crispy. Remove the bacon and set it aside on a paper towel-lined plate to drain.
  2. In a large pot, bring water to a boil. Add the white vinegar and reduce the heat to a gentle simmer.
  3. Crack each egg in a separate bowl. Slide each egg into the simmering water, one at a time. Cook until the white is set, about 3-4 minutes.
