Pork Empanadas Recipe

Ingredients:

  • 1 pound ground pork
  • 1/2 onion, chopped
  • 2 cloves garlic, minced
  • 1 teaspoon oregano
  • 1 teaspoon cumin
  • 1/2 teaspoon smoked paprika
  • Salt and pepper to taste
  • 1 package refrigerated pie crusts
  • 1 egg, beaten

Directions:

  1. Preheat the oven to 375°F.
  2. In a skillet over medium heat, cook the ground pork, onion, and garlic until the pork is browned and the onion is tender. Drain off any excess fat.
  3. Combine the cooked pork mixture with the oregano, cumin, smoked paprika, salt, and pepper. Mix well.
  4. Roll out the pie crusts and cut them into 3-inch circles using a cookie cutter or glass. Re-roll the scraps as needed to make more circles.
  5. Place about a tablespoon of the pork mixture on one half of each circle, leaving a small border around the edge.
  6. Brush the beaten egg on the edges of each circle, then fold the other half of the circle over the filling. Press the edges together with a fork to seal.
  7. Prick the tops of the empanadas with a fork to create vent holes.
  8. Brush the tops of the empanadas with the remaining beaten egg.
  9. Bake for 20-25 minutes or until golden brown. Serve hot.
