Pork Empanadas Recipe
Ingredients:
- 1 pound ground pork
- 1/2 onion, chopped
- 2 cloves garlic, minced
- 1 teaspoon oregano
- 1 teaspoon cumin
- 1/2 teaspoon smoked paprika
- Salt and pepper to taste
- 1 package refrigerated pie crusts
- 1 egg, beaten
Directions:
- Preheat the oven to 375°F.
- In a skillet over medium heat, cook the ground pork, onion, and garlic until the pork is browned and the onion is tender. Drain off any excess fat.
- Combine the cooked pork mixture with the oregano, cumin, smoked paprika, salt, and pepper. Mix well.
- Roll out the pie crusts and cut them into 3-inch circles using a cookie cutter or glass. Re-roll the scraps as needed to make more circles.
- Place about a tablespoon of the pork mixture on one half of each circle, leaving a small border around the edge.
- Brush the beaten egg on the edges of each circle, then fold the other half of the circle over the filling. Press the edges together with a fork to seal.
- Prick the tops of the empanadas with a fork to create vent holes.
- Brush the tops of the empanadas with the remaining beaten egg.
- Bake for 20-25 minutes or until golden brown. Serve hot.
