This is a simple yet delicious recipe that combines the creamy texture of baked potatoes with the tangy and pungent flavor of cabrales cheese. It’s perfect as a side dish or as a vegetarian main course.

Ingredients:

  • 4 large potatoes
  • 100 gr of cabrales cheese, crumbled
  • 2 tablespoons of butter
  • 1/2 cup of milk
  • Salt and pepper to taste

Instructions:

  1. Preheat your oven to 200C.
  2. Wash the potatoes thoroughly and prick several times with a fork.
  3. Bake the potatoes in the oven for 45 minutes or until cooked through.
  4. When the potatoes are cooked, remove them from the oven and slice them in half lengthwise.
  5. Scoop out the flesh of each potato half with a spoon, taking care not to pierce the skin. Reserve the flesh in a mixing bowl.
  6. Add the crumbled cabrales cheese, butter, and milk to the mixing bowl with the potato flesh. Beat with a hand mixer until smooth and creamy.
  7. Season the potato-cabrales mixture with salt and pepper to taste.
  8. Spoon the mixture back into each potato shell, dividing it evenly.
  9. Bake the stuffed potatoes in the oven for another 15 to 20 minutes or until golden brown on top.
  10. Remove the potatoes from the oven and let cool for 5 minutes before serving.
