Ingredients

  • 1 cup pitted prunes
  • 1/2 cup unsalted butter, room temperature
  • 3/4 cup granulated sugar
  • 2 eggs
  • 1 tsp vanilla extract
  • 1 1/2 cups all-purpose flour
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp ground cinnamon
  • 1/4 tsp ground nutmeg
  • 1/4 tsp ground cloves
  • 1/4 tsp salt
  • 1/2 cup milk

Instructions

  1. Preheat the oven to 350°F. Grease a 9-inch cake pan and line the bottom with parchment paper.
  2. In a small saucepan, cover the pitted prunes with water and bring to a boil. Reduce the heat to low and simmer for 5 minutes. Drain and set aside to cool.
  3. In a large mixing bowl, cream the butter and sugar until light and fluffy. Add the eggs one at a time, beating well after each addition. Stir in the vanilla extract.
