Prune Cake Recipe

Ingredients:

  • 1 cup of prunes, pitted and chopped
  • 1 cup of boiling water
  • 1/2 cup of butter, room temperature
  • 1 cup of sugar
  • 2 eggs
  • 2 cups of flour
  • 1 tsp of baking soda
  • 1/2 tsp of salt
  • 1 tsp of vanilla extract

Instructions:

  1. Preheat the oven to 350°F (175°C). Grease and flour a 9-inch springform pan.
  2. In a medium bowl, combine the prunes and boiling water. Let the mixture cool.
  3. In a large mixing bowl, cream together the butter and sugar until fluffy. Beat in the eggs one at a time.
  4. Sift together the flour, baking soda, and salt. Gradually add the flour mixture to the butter mixture and mix well.
  5. Stir in the cooled prune mixture and vanilla extract.
  6. Pour the batter into the prepared pan. Smooth out the top with a spatula.
  7. Bake for 45-50 minutes or until a toothpick inserted into the center of the cake comes out clean.
  8. Cool the cake in the pan for 10 minutes before removing from the pan to cool completely on a wire rack.
  9. Garnish with chopped prunes and serve.
