Prune Cake Recipe
Ingredients:
- 1 cup of prunes, pitted and chopped
- 1 cup of boiling water
- 1/2 cup of butter, room temperature
- 1 cup of sugar
- 2 eggs
- 2 cups of flour
- 1 tsp of baking soda
- 1/2 tsp of salt
- 1 tsp of vanilla extract
Instructions:
- Preheat the oven to 350°F (175°C). Grease and flour a 9-inch springform pan.
- In a medium bowl, combine the prunes and boiling water. Let the mixture cool.
- In a large mixing bowl, cream together the butter and sugar until fluffy. Beat in the eggs one at a time.
- Sift together the flour, baking soda, and salt. Gradually add the flour mixture to the butter mixture and mix well.

- Bake for 45-50 minutes or until a toothpick inserted into the center of the cake comes out clean.
- Cool the cake in the pan for 10 minutes before removing from the pan to cool completely on a wire rack.
- Garnish with chopped prunes and serve.
