Puff Pastry with Scallops and Saffron

Ingredients

  • 1 package of puff pastry sheets, thawed
  • 16 oz large scallops
  • 1/2 tsp saffron threads
  • 1/4 cup white wine
  • 4 tbsp unsalted butter
  • 4 cloves garlic, minced
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1 egg

Instructions

  1. Preheat oven to 400°F.
  2. Roll out puff pastry sheets on a lightly floured surface and cut into 4 equal pieces.
  3. Place the puff pastry pieces on a baking sheet lined with parchment paper and set aside.
  4. In a small bowl, crush saffron threads and add white wine. Set aside.
  5. Pat scallops dry with paper towels and season with salt and pepper.
  6. In a large saucepan, melt butter over medium heat. Add garlic and sauté for 1 minute.
  7. Add the saffron-wine mixture and stir well.
  8. Add scallops and cook for 2-3 minutes on each side until golden brown.
  9. Remove scallops from the pan and cut into bite-sized pieces.
  10. Spoon the scallop mixture onto the puff pastry pieces and brush the edges of the pastry with beaten egg.
  11. Bake for 15-20 minutes or until puff pastry is golden brown.
