Puffed Red Rice and Iced Garlic Milk

Ingredients

  • 1 cup of red rice
  • 1 cup of cold milk
  • 4 cloves of garlic
  • 1 tablespoon of honey
  • 1 tablespoon of olive oil
  • 1 teaspoon of salt

Directions

Puffed Red Rice

  1. Rinse the red rice with water until the water runs clear.
  2. After rinsing, add the rice to a medium-sized pot, and add enough water to cover the rice by about an inch.
  3. Let the rice soak in the water for at least 1 hour.
  4. After an hour of soaking, drain the soaking water and add 1.5 cups of fresh water to the pot along with the salt.
  5. Bring the water to a boil, and then reduce heat to a simmer and cover the pot.
  6. Cook for about 20-25 minutes, or until the rice is completely cooked through.
  7. After cooking, turn off the heat and let the rice sit, covered, for about 5-10 minutes.
  8. Once it has rested, remove the lid and let the rice cool to room temperature.
  9. Once the rice is cooled, heat 1 tbsp of olive oil in a deep pan and add rice
  10. Cook the rice on medium heat for 5-7 minutes, stirring occasionally until the rice puffs up.
  11. Transfer the puffed red rice into a bowl.

Iced Garlic Milk

  1. Peel and crush 4 cloves of garlic.
  2. In a small saucepan bring milk and garlic to a boil.
  3. Reduce heat and simmer for 5 minutes, then remove from heat and let garlic-milk mixture cool to room temperature.
  4. Once the mixture cooled, transfer to a blender and mix until smooth.
  5. Place the garlic-milk mixture, honey, and some ice into a blender and blend until everything combines well.
  6. Pour the iced garlic milk into a cup and serve with the puffed red rice.
