Puffed Red Rice and Iced Garlic Milk
Ingredients
- 1 cup of red rice
- 1 cup of cold milk
- 4 cloves of garlic
- 1 tablespoon of honey
- 1 tablespoon of olive oil
- 1 teaspoon of salt
Directions
Puffed Red Rice
- Rinse the red rice with water until the water runs clear.
- After rinsing, add the rice to a medium-sized pot, and add enough water to cover the rice by about an inch.
- Let the rice soak in the water for at least 1 hour.
- After an hour of soaking, drain the soaking water and add 1.5 cups of fresh water to the pot along with the salt.
- Bring the water to a boil, and then reduce heat to a simmer and cover the pot.
- Cook for about 20-25 minutes, or until the rice is completely cooked through.
- After cooking, turn off the heat and let the rice sit, covered, for about 5-10 minutes.
- Once it has rested, remove the lid and let the rice cool to room temperature.
- Once the rice is cooled, heat 1 tbsp of olive oil in a deep pan and add rice
- Cook the rice on medium heat for 5-7 minutes, stirring occasionally until the rice puffs up.
- Transfer the puffed red rice into a bowl.
Iced Garlic Milk
- Peel and crush 4 cloves of garlic.
- In a small saucepan bring milk and garlic to a boil.
- Reduce heat and simmer for 5 minutes, then remove from heat and let garlic-milk mixture cool to room temperature.
- Once the mixture cooled, transfer to a blender and mix until smooth.
- Place the garlic-milk mixture, honey, and some ice into a blender and blend until everything combines well.
- Pour the iced garlic milk into a cup and serve with the puffed red rice.
