Pumpkin and Bacon Pucks

Ingredients:

  • 1 small pumpkin, peeled and cubed
  • 6 strips of bacon, diced
  • 1 onion, diced
  • 2 cloves of garlic, minced
  • 1 tablespoon of olive oil
  • Salt and pepper to taste

Instructions:

  1. Preheat your oven to 400°F (200°C).
  2. In a large bowl, toss the pumpkin cubes with olive oil, salt, and pepper.
  3. Spread the pumpkin cubes on a baking sheet covered in parchment paper.
  4. Bake for 15 minutes or until the pumpkin is fork-tender.
  5. While the pumpkin is baking, cook the bacon in a skillet over medium heat until crispy. Remove from the pan and set aside on a paper towel to drain.
  6. Add the onion and garlic to the same skillet you cooked the bacon in. Sauté until the onion is translucent.
  7. Add the cooked pumpkin and the bacon to the skillet with the onion and garlic. Combine well.
  8. Reduce the oven temperature to 375°F (190°C).
  9. Grease a 12-muffin tin with cooking spray.
  10. Carefully spoon the pumpkin and bacon mixture into 12 muffin tins, filling each about ¾ full.
  11. Place the muffin tin in the preheated oven and bake for 20-25 minutes or until the tops are golden brown.
  12. Remove the muffin tin from the oven and let the pumpkin and bacon pucks cool for 5 minutes.
  13. Use a spoon to gently remove the pucks from the muffin tin.
  14. Serve warm and enjoy!
