Queijadinha

Ingredients:

  • 2 cups of grated coconut
  • 1 cup of sugar
  • 1 cup of grated Parmesan cheese
  • 1/2 cup of butter
  • 4 eggs
  • 1/2 cup of all-purpose flour
  • 1/2 cup of milk
  • 1 teaspoon of baking powder

Instructions:

  1. Preheat the oven to 375 degrees Fahrenheit.
  2. Mix the grated coconut, sugar, Parmesan cheese, and butter in a bowl.
  3. Add the eggs one at a time, beating well after each addition.
  4. Stir in the flour, milk, and baking powder until well mixed.
  5. Grease a muffin tin. Fill each muffin cup about 3/4 full with the queijadinha mixture.
  6. Bake for about 20 to 25 minutes, or until the queijadinhas are golden brown on top and cooked through.
  7. Remove the queijadinhas from the oven and let them cool for a few minutes in the muffin tin before removing them to a wire rack to cool completely.
