Queijadinha
Ingredients:
- 2 cups of grated coconut
- 1 cup of sugar
- 1 cup of grated Parmesan cheese
- 1/2 cup of butter
- 4 eggs
- 1/2 cup of all-purpose flour
- 1/2 cup of milk
- 1 teaspoon of baking powder
Instructions:
- Preheat the oven to 375 degrees Fahrenheit.
- Mix the grated coconut, sugar, Parmesan cheese, and butter in a bowl.
- Add the eggs one at a time, beating well after each addition.
- Stir in the flour, milk, and baking powder until well mixed.
- Grease a muffin tin. Fill each muffin cup about 3/4 full with the queijadinha mixture.
- Bake for about 20 to 25 minutes, or until the queijadinhas are golden brown on top and cooked through.
- Remove the queijadinhas from the oven and let them cool for a few minutes in the muffin tin before removing them to a wire rack to cool completely.
