Quick Risotto Recipe

Ingredients

  • 1 cup Arborio rice
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 2 tbsp olive oil
  • 4 cups chicken or vegetable broth
  • 1/2 cup white wine
  • 1/2 cup grated Parmesan cheese
  • Salt and pepper to taste

Instructions

  1. Heat olive oil in a large saucepan over medium heat. Add onion and garlic, and sauté until translucent.
  2. Add Arborio rice to the saucepan and stir for about 1 minute, until rice is lightly toasted.
  3. Pour white wine into the saucepan and stir until the liquid is absorbed.
  4. Add chicken or vegetable broth to the saucepan, 1 cup at a time, stirring continuously until the liquid is absorbed before adding the next cup.
  5. Continue stirring and adding broth until the rice is creamy and cooked through, which should take approximately 20 to 25 minutes.
  6. Remove the saucepan from heat and stir in grated Parmesan cheese, salt and pepper. Serve immediately.
