Quick Risotto Recipe
Ingredients
- 1 cup Arborio rice
- 1 small onion, finely chopped
- 2 cloves garlic, minced
- 2 tbsp olive oil
- 4 cups chicken or vegetable broth
- 1/2 cup white wine
- 1/2 cup grated Parmesan cheese
- Salt and pepper to taste
Instructions
- Heat olive oil in a large saucepan over medium heat. Add onion and garlic, and sauté until translucent.
- Add Arborio rice to the saucepan and stir for about 1 minute, until rice is lightly toasted.
- Pour white wine into the saucepan and stir until the liquid is absorbed.
- Add chicken or vegetable broth to the saucepan, 1 cup at a time, stirring continuously until the liquid is absorbed before adding the next cup.
- Continue stirring and adding broth until the rice is creamy and cooked through, which should take approximately 20 to 25 minutes.
- Remove the saucepan from heat and stir in grated Parmesan cheese, salt and pepper. Serve immediately.
