Quick Shepherd’s Pie Recipe

Ingredients:

  • 1 lb ground beef
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 can corn, drained
  • 1 can peas, drained
  • 2 cups mashed potatoes
  • 1/2 cup beef broth
  • 2 tbsp tomato paste
  • 2 tbsp Worcestershire sauce
  • Salt and pepper to taste
  • Olive oil for cooking

Instructions:

  1. Preheat oven to 375°F.
  2. Heat olive oil in a large skillet over medium-high heat. Cook ground beef, onion, and garlic for about 8 minutes or until beef is browned and onion is soft.
  3. Add corn, peas, tomato paste, Worcestershire sauce, beef broth, salt, and pepper to the skillet. Cook for another 5 minutes until the vegetables are soft.
  4. Spoon the mixture into an 8×8 baking dish. Spread mashed potatoes over the top of the beef mixture, spreading it evenly.
  5. Bake in the preheated oven for 30 minutes or until the mashed potatoes are lightly browned.
  6. Remove the baking dish from the oven and let it cool for 5 minutes before serving.
