Quick Tabbouleh Recipe

Ingredients

  • 1 cup bulgur wheat
  • 1 1/2 cups boiling water
  • 1/4 cup fresh lemon juice
  • 1/4 cup extra-virgin olive oil
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 cups chopped fresh parsley
  • 1/2 cup finely chopped red onion
  • 1/2 cup chopped fresh mint
  • 1 cucumber, peeled and diced
  • 1 pint cherry tomatoes, quartered

Instructions

  1. Place bulgur in a medium bowl, and cover with boiling water. Cover bowl with plastic wrap and let stand for 15 minutes.
  2. Meanwhile, in a small bowl, whisk together lemon juice, olive oil, salt, and black pepper.
  3. When the bulgur is ready, fluff it with a fork and add parsley, red onion, mint, cucumber, and cherry tomatoes.
  4. Pour dressing over the top and toss well to combine.
  5. Chill for at least 30 minutes before serving.
