Ingredients

  • 2 cups fresh raspberries
  • 1/2 cup granulated sugar
  • 1/4 cup water
  • 2 packets unflavored gelatin powder
  • 1/2 cup shelled pistachios
  • 2 cups heavy cream
  • 1/2 cup powdered sugar
  • 1 tsp vanilla extract

Directions

  1. In a medium saucepan, mix raspberries, granulated sugar, and water together and simmer, stirring occasionally, for 10 minutes.
  2. Remove from heat and puree the mixture until smooth using a blender or food processor.
  3. Pass the raspberry puree through a sieve to remove any seeds or chunks.
  4. Sprinkle gelatin powder over raspberry puree, and let it sit for 5 minutes.
  5. Heat the raspberry mixture over medium heat, stirring constantly until the gelatin has dissolved.
  6. In another saucepan, toast pistachios over medium heat for 3-5 minutes, until fragrant, stirring occasionally.
  7. Pulse the pistachios in a food processor until finely chopped and set aside.
  8. Whip heavy cream with powdered sugar and vanilla extract until stiff peaks form.
  9. In a separate bowl, combine 1 cup of whipped cream and raspberry mixture.
  10. Fold in the remaining whipped cream and pistachios until fully incorporated.
  11. Pour mixture into a well-greased mold or molds and chill for at least 2 hours or until set.
  12. Once set, remove from the mold and serve cold.
