Raspberry Vanilla Vacherin Recipe

Ingredients:

  • 6 egg whites
  • 1 1/4 cups granulated sugar
  • 1 tsp vanilla extract
  • 1 pint raspberry sorbet
  • 1 pint vanilla ice cream
  • 1 cup fresh raspberries
  • 2 tbsp powdered sugar

Instructions:

  1. Preheat the oven to 250°F (120°C) and line a baking sheet with parchment paper.
  2. In a medium bowl, beat the egg whites until stiff peaks form.
  3. Add 1 cup of granulated sugar, one tablespoon at a time, beating well after each addition until the mixture is thick and glossy,
  4. Add vanilla extract and beat for another minute.
  5. Use a spatula to transfer the mixture to a piping bag fitted with a large star nozzle.
  6. Pipe 12 large swirls onto the prepared baking sheet, making sure they are evenly spaced apart.
  7. Bake for 1 1/2 to 2 hours, or until the meringues are lightly golden, crisp on the outside, and soft on the inside. Turn off the oven, leave the door slightly ajar, and let the meringues cool completely.
  8. When the meringues are cooled, smash them into small pieces and set them aside.
  9. In a mixing bowl, mix the raspberry sorbet with a spatula until it softens.
  10. Chop the vanilla ice cream into small pieces and add it into the raspberry sorbet, stir everything together until it is combined.
  11. Place the raspberry-vanilla mixture back into the freezer for 15 minutes.

  13. Sprinkle powdered sugar on top and mix well.
