Red Fruit Soup

Ingredients:

  • 2 cups strawberries
  • 2 cups raspberries
  • 2 cups cherries
  • 1 cup sugar
  • 2 cups water
  • 2 tablespoons cornstarch
  • 2 tablespoons water

Instructions:

  1. Wash all the fruit, remove the pits from the cherries and cut them in half.
  2. In a large pot, combine the strawberries, raspberries, cherries, sugar and water.
  3. Cook over medium heat, stirring occasionally, until the fruit is soft and the mixture begins to thicken, about 20-25 minutes.
  4. In a small bowl, mix together the cornstarch and water until smooth.
  5. Gradually stir the cornstarch mixture into the fruit mixture until well combined.
  6. Continue to cook for an additional 5-10 minutes, stirring constantly, until the soup has thickened to your liking.
  7. Remove from heat and allow to cool to room temperature before serving.
