Red Fruit Soup
Ingredients:
- 2 cups strawberries
- 2 cups raspberries
- 2 cups cherries
- 1 cup sugar
- 2 cups water
- 2 tablespoons cornstarch
- 2 tablespoons water
Instructions:
- Wash all the fruit, remove the pits from the cherries and cut them in half.
- In a large pot, combine the strawberries, raspberries, cherries, sugar and water.
- Cook over medium heat, stirring occasionally, until the fruit is soft and the mixture begins to thicken, about 20-25 minutes.
- In a small bowl, mix together the cornstarch and water until smooth.
- Gradually stir the cornstarch mixture into the fruit mixture until well combined.
- Continue to cook for an additional 5-10 minutes, stirring constantly, until the soup has thickened to your liking.
- Remove from heat and allow to cool to room temperature before serving.
