Red Onion Pie Recipe

Ingredients

  • 1 pre-made pie crust
  • 4 medium red onions, thinly sliced
  • 2 tablespoons butter
  • 1 tablespoon olive oil
  • 2 tablespoons balsamic vinegar
  • 3 eggs, beaten
  • 1/2 cup heavy cream
  • 1/4 cup grated Parmesan cheese
  • Salt and black pepper to taste

Instructions

  1. Preheat the oven to 375°F (190°C). Roll out the pie crust and fit it into a 9-inch pie dish.
  2. In a large skillet, melt the butter and olive oil over medium heat. Add the sliced onions and cook for 10-15 minutes or until softened and lightly browned.
  3. Stir in the balsamic vinegar and continue cooking for another 2-3 minutes.
  4. Spread the onion mixture evenly into the prepared pie crust.
  5. In a small bowl, mix together the eggs, heavy cream, Parmesan cheese, salt and black pepper until well combined.
  6. Pour the egg mixture into the pie crust over the onions.
  7. Bake for 30-35 minutes or until the filling is set and the top is lightly golden.
  8. Allow the pie to cool slightly before serving.
