Red Onion Pie Recipe
Ingredients
- 1 pre-made pie crust
- 4 medium red onions, thinly sliced
- 2 tablespoons butter
- 1 tablespoon olive oil
- 2 tablespoons balsamic vinegar
- 3 eggs, beaten
- 1/2 cup heavy cream
- 1/4 cup grated Parmesan cheese
- Salt and black pepper to taste
Instructions
- Preheat the oven to 375°F (190°C). Roll out the pie crust and fit it into a 9-inch pie dish.
- In a large skillet, melt the butter and olive oil over medium heat. Add the sliced onions and cook for 10-15 minutes or until softened and lightly browned.
- Stir in the balsamic vinegar and continue cooking for another 2-3 minutes.
- Spread the onion mixture evenly into the prepared pie crust.
- In a small bowl, mix together the eggs, heavy cream, Parmesan cheese, salt and black pepper until well combined.
- Pour the egg mixture into the pie crust over the onions.
- Bake for 30-35 minutes or until the filling is set and the top is lightly golden.
- Allow the pie to cool slightly before serving.
