Reunion Style Rice Recipe

Ingredients:

  • 2 cups of long-grain white rice
  • 4 cups of water
  • 1 large onion, chopped
  • 3 cloves of garlic, minced
  • 1 green bell pepper, seeded and chopped
  • 1 red bell pepper, seeded and chopped
  • 1/4 cup of vegetable oil
  • 1 teaspoon of salt
  • 1/2 teaspoon of cayenne pepper
  • 1 bay leaf
  • 2 tablespoons of tomato paste

Instructions:

  1. In a large heavy pot, heat the vegetable oil over medium heat. Add the onion, garlic, green and red bell pepper and sauté until the onion is translucent.
  2. Add the tomato paste, salt, cayenne pepper and bay leaf and cook for 5 more minutes, stirring often.
  3. Add the rice and stir to coat with the vegetable mixture.
  4. Add the water, stir and bring to a boil.
  5. Turn heat to low, cover the pot and simmer for about 20 minutes.
  6. Remove from heat and let rest for another 5 minutes before stirring the rice.
  7. Fluff the rice up with a fork and serve.
