Rice Pie Recipe
Ingredients:
- 2 cups cooked rice
- 2 tablespoons olive oil
- 1 small onion, chopped
- 2 garlic cloves, minced
- 1/2 pound ground beef
- 1/4 cup tomato paste
- 1 teaspoon dried oregano
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1 cup shredded mozzarella cheese
- 1/3 cup grated Parmesan cheese
- 2 eggs
Instructions:
- Preheat oven to 350°F.
- In a large skillet, heat olive oil over medium heat.
- Add chopped onion and minced garlic. Sauté until onion is translucent, for about 5-7 minutes.
- Add ground beef and cook until browned, for about 10-12 minutes.
- Add tomato paste, dried oregano, salt, and black pepper. Stir well to combine.
- Remove from heat and set aside.
- In a large mixing bowl, combine cooked rice, shredded mozzarella cheese, grated Parmesan cheese, and 2 beaten eggs. Stir well to combine.
- Spread half of the rice mixture evenly into a pie dish.
- Add the ground beef mixture on top of the rice layer.
- Spread the remaining half of the rice mixture evenly on top of the ground beef layer.
- Bake for about 25-30 minutes, or until the top is golden brown.
- Let it cool down for 5 minutes before serving.
