Rice Pie Recipe

Ingredients:

  • 2 cups cooked rice
  • 2 tablespoons olive oil
  • 1 small onion, chopped
  • 2 garlic cloves, minced
  • 1/2 pound ground beef
  • 1/4 cup tomato paste
  • 1 teaspoon dried oregano
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 cup shredded mozzarella cheese
  • 1/3 cup grated Parmesan cheese
  • 2 eggs

Instructions:

  1. Preheat oven to 350°F.
  2. In a large skillet, heat olive oil over medium heat.
  3. Add chopped onion and minced garlic. Sauté until onion is translucent, for about 5-7 minutes.
  4. Add ground beef and cook until browned, for about 10-12 minutes.
  5. Add tomato paste, dried oregano, salt, and black pepper. Stir well to combine.
  6. Remove from heat and set aside.
  7. In a large mixing bowl, combine cooked rice, shredded mozzarella cheese, grated Parmesan cheese, and 2 beaten eggs. Stir well to combine.
  8. Spread half of the rice mixture evenly into a pie dish.
  9. Add the ground beef mixture on top of the rice layer.
  10. Spread the remaining half of the rice mixture evenly on top of the ground beef layer.
  11. Bake for about 25-30 minutes, or until the top is golden brown.
  12. Let it cool down for 5 minutes before serving.
