Rice with Prawns, Curry and Coconut Recipe
Ingredients:
- 1 cup of Basmati rice
- 1 can of coconut milk
- 1 lb of prawns, peeled and deveined
- 1 onion, chopped
- 3 cloves of garlic, minced
- 1 tsp of ginger, grated
- 1 tbsp of curry powder
- 2 tbsp of olive oil
- Salt and pepper to taste
- Fresh cilantro for garnish (optional)
Instructions:
- Bring 2 cups of water to a boil in a medium pot. Add the rice and reduce the heat to low. Cover and let cook for 18-20 minutes or until fully cooked. Remove from the heat and fluff with a fork.
