Roasted Figs with Bottarga Recipe

Ingredients

  • 12 fresh figs
  • 2 tbsp olive oil
  • 1/2 tsp sea salt
  • 1/4 tsp black pepper
  • 1/4 cup grated bottarga
  • Fresh thyme, for garnish

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Line a baking sheet with parchment paper. Trim off the stem end of each fig and cut in half lengthwise.
  3. Arrange the figs cut side up on the prepared baking sheet.
  4. Drizzle the olive oil over the figs and sprinkle with sea salt and black pepper.
  5. Roast in the oven for 15 to 20 minutes, until the figs are soft and caramelized.
  6. Sprinkle the grated bottarga over the roasted figs and return to the oven for 1 to 2 minutes to warm through.
  7. Remove the figs from the oven and garnish with fresh thyme leaves. Serve warm.
