Round Zucchini in the Oven Recipe

Ingredients:

  • 6 round zucchinis
  • ½ cup breadcrumbs
  • ½ cup Parmesan cheese
  • 1 tablespoon chopped fresh oregano
  • 2 cloves garlic, minced
  • 1 teaspoon salt
  • ¼ teaspoon black pepper
  • 2 tablespoons olive oil

Instructions:

  1. Preheat the oven to 375°F (190°C).
  2. Cut the top off each zucchini and discard. Scoop out the flesh with a spoon or melon baller, leaving a 1/4-inch thick shell. Reserve the flesh in a bowl.
  3. Chop the zucchini flesh into small pieces. Add breadcrumbs, Parmesan cheese, chopped fresh oregano, minced garlic, salt, black pepper, and olive oil. Mix well.
