Sauteed Basque Veal Recipe

Ingredients:

  • 2 lbs of veal scallopini, sliced thinly
  • 2 tbsp of olive oil
  • 1 tbsp of butter
  • 2 garlic cloves, minced
  • 1 small onion, finely chopped
  • 1 red bell pepper, seeded and cut into thin strips
  • 1 green bell pepper, seeded and cut into thin strips
  • 1 tsp of dried thyme
  • salt and pepper to taste
  • splash of red wine vinegar
  • 2 tbsp of fresh parsley leaves, chopped

Instructions:

  1. Season the veal scallopini on both sides with salt and pepper.
  2. In a large frying pan, heat olive oil and butter over medium-high heat.
  3. When the butter has melted, add garlic and onions to the pan. Stir for a few minutes until soft and fragrant.
  4. Add the veal scallopini to the pan and cook for approximately 2-3 minutes on each side until fully cooked and lightly browned.
  5. Remove the cooked veal from the pan and place it on a plate.
  6. To the same pan, add the red and green bell peppers, thyme, and a splash of red wine vinegar.
  7. Cook the peppers for approximately 3-4 minutes until tender.
  8. Season with salt and pepper to taste.
  9. Add the cooked veal to the pan and toss everything together.
  10. Serve the sautéed Basque veal hot with chopped parsley as a garnish.
