Savory Madeleines Recipe for the Aperitif
Ingredients:
- ⅔ cup all-purpose flour
- 1 tsp. baking powder
- ¼ tsp. salt
- 3 eggs
- ½ cup unsalted butter, melted and cooled

Instructions:
- Preheat the oven to 375°F (190°C). Grease a madeleine tray with butter and dust with flour.
- In a medium-sized bowl, whisk together the flour, baking powder, and salt.
- In a separate large bowl, whisk the eggs until frothy and pale yellow.
- Slowly pour the melted butter into the eggs, whisking constantly.
- Add the grated Parmesan cheese, fresh parsley, fresh chives, fresh thyme, lemon zest, and black pepper to the egg mixture. Whisk to combine.
- Slowly add the flour mixture into the egg mixture in three additions, whisking until just combined. Do not overmix.
- Cover the bowl with plastic wrap and refrigerate for at least 30 minutes.
- Scoop a tablespoon of the batter into each madeleine mold, filling about ¾ full.
- Bake in the preheated oven for 12-15 minutes, or until golden brown and a toothpick inserted into the center comes out clean.
- Remove from the oven and let cool in the tray for 5 minutes. Then, carefully remove the madeleines from the tray and cool on a wire rack.
- Once cooled, store in an airtight container until ready to serve.
