Savory Madeleines Recipe for the Aperitif

Ingredients:

  • ⅔ cup all-purpose flour
  • 1 tsp. baking powder
  • ¼ tsp. salt
  • 3 eggs
  • ½ cup unsalted butter, melted and cooled
  • ½ cup grated Parmesan cheese
  • 2 tbsp. fresh parsley, finely chopped
  • 2 tbsp. fresh chives, finely chopped
  • 2 tbsp. fresh thyme, finely chopped
  • zest of 1 lemon
  • freshly ground black pepper

Instructions:

  1. Preheat the oven to 375°F (190°C). Grease a madeleine tray with butter and dust with flour.
  2. In a medium-sized bowl, whisk together the flour, baking powder, and salt.
  3. In a separate large bowl, whisk the eggs until frothy and pale yellow.
  4. Slowly pour the melted butter into the eggs, whisking constantly.
  5. Add the grated Parmesan cheese, fresh parsley, fresh chives, fresh thyme, lemon zest, and black pepper to the egg mixture. Whisk to combine.
  6. Slowly add the flour mixture into the egg mixture in three additions, whisking until just combined. Do not overmix.
  7. Cover the bowl with plastic wrap and refrigerate for at least 30 minutes.
  8. Scoop a tablespoon of the batter into each madeleine mold, filling about ¾ full.
  9. Bake in the preheated oven for 12-15 minutes, or until golden brown and a toothpick inserted into the center comes out clean.
  10. Remove from the oven and let cool in the tray for 5 minutes. Then, carefully remove the madeleines from the tray and cool on a wire rack.
  11. Once cooled, store in an airtight container until ready to serve.
