Scallops with Cider Recipe
Ingredients:
- 12 fresh scallops
- 2 small shallots, finely sliced
- 2 cloves of garlic, chopped
- 2 cups of dry cider
- 1/4 cup of heavy cream
- 2 tablespoons of unsalted butter
- 2 tablespoons of olive oil
- Salt and pepper to taste
Instructions:
1. Heat the olive oil and butter in a large frying pan over medium-high heat.
2. Add the shallots and garlic and sauté until softened.
3. Season the scallops with salt and pepper, then add them to the pan.
4. Increase the heat to high and cook the scallops until golden brown on each side, about 2-3 minutes per side.
5. Remove the scallops from the pan and set them aside.
6. In the same pan, pour in the cider and let it reduce by half.
7. Add in the heavy cream, stirring constantly until the sauce thickens and coats the back of a spoon.
8. Put the scallops back into the pan and coat them with the cider sauce.
9. Cook for an additional 1-2 minutes until the scallops are heated through.
