Seafood Cannelloni Recipe

Ingredients:

  • 12 cannelloni tubes
  • 300 grams cooked seafood (shrimp, crab, scallops, and/or lobster)
  • 1/2 cup grated Parmesan cheese
  • 1/2 cup grated mozzarella cheese
  • 2 cups spinach, chopped
  • 1/4 cup onion, chopped
  • 2 cloves garlic, minced
  • 1/4 cup all-purpose flour
  • 2 1/2 cups milk
  • 2 tablespoons butter
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

Instructions:

  1. Preheat oven to 350°F.
  2. Cook cannelloni tubes according to package instructions. Once cooked, drain and set aside.
  3. In a large bowl, mix together cooked seafood, Parmesan cheese, mozzarella cheese, and chopped spinach.
  4. In a saucepan, sauté chopped onion and minced garlic in butter until onion is translucent.
  5. Add flour, salt, and black pepper to saucepan and whisk until smooth. Cook for 1 minute.
  6. Slowly whisk in milk and continue cooking until mixture thickens, about 5 minutes.
  7. Add half of the sauce to the seafood mixture and mix well.
  8. Fill cannelloni tubes with the seafood mixture and place them in a baking dish.
  9. Pour remaining sauce on top of cannelloni tubes.
  10. Bake for 30 minutes or until golden brown on top.
  11. Let cool for 5-10 minutes before serving.
