Serendipity – Regal Recipe
Ingredients:
- 2 lbs. of beef tenderloin, trimmed and tied
- 1/2 cup of red wine
- 1/4 cup of balsamic vinegar
- 1/4 cup of soy sauce
- 1/4 cup of honey
- 4 cloves of garlic, minced
- 2 tbsp. of dijon mustard
- 2 tbsp. of olive oil
- 1 tsp. of dried thyme
- Salt and pepper to taste
Instructions:
- Preheat the oven to 375°F (190°C).
- In a small mixing bowl, whisk together the red wine, balsamic vinegar, soy sauce, honey, garlic, dijon mustard, olive oil, dried thyme, and salt and pepper.
- Place the beef tenderloin in a roasting pan and coat it with the marinade mixture.
- Cook the beef in the preheated oven until it reaches an internal temperature of 125°F (52°C) for medium-rare, or 135°F (57°C) for medium, about 30-40 minutes.
- Remove the beef from the oven and let it rest for 10-15 minutes before slicing and serving.
