Ingredients:

  • 12 large shrimp, peeled and deveined
  • 2 medium zucchinis
  • 2 tablespoons olive oil
  • 1 garlic clove, minced
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon paprika
  • 1/4 teaspoon cayenne pepper
  • 1 tablespoon fresh parsley, chopped

Instructions:

  1. Cut the zucchinis lengthwise into thin slices using a mandoline or a vegetable peeler.
  2. In a skillet, heat the olive oil over medium-high heat. Add the minced garlic and cook for 1 minute.
  3. Add the shrimp, salt, black pepper, paprika, and cayenne pepper. Cook for 2-3 minutes or until the shrimp turns pink and is cooked through.
