Ingredients

  • 1 bunch Swiss chard, washed and chopped
  • 6 slices of bacon, cooked and crumbled
  • 1/2 cup shredded cheddar cheese
  • 4 eggs
  • 1/2 cup heavy cream
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1/4 tsp nutmeg
  • 1 Tbsp olive oil
  • 1 pre-made pie crust, rolled out and cut into circles

Instructions:

  1. Preheat your oven to 375 degrees F.
  2. Heat 1 tablespoon of olive oil in a large skillet over medium heat. Add the chopped Swiss chard to the skillet and sauté until wilted and tender, about 5-7 minutes.
  3. Remove the skillet from heat, and let the Swiss chard cool for a few minutes. Then divide it evenly between the pie crust circles.
  4. Sprinkle crumbled bacon and shredded cheddar cheese on top of the Swiss chard in each pie crust circle.
  5. In a medium mixing bowl, whisk together 4 eggs, 1/2 cup heavy cream, 1/2 tsp salt, 1/4 tsp black pepper, and 1/4 tsp nutmeg. Pour this egg mixture over the ingredients in the pie crusts.
  6. Bake the quiches in the preheated oven for 20-25 minutes, or until the egg mixture is set and the crust is golden brown.
  7. Remove the quiches from the oven and let them cool for a few minutes before serving.
