Small Savory with Lentils Recipe

Ingredients:

  • 1 cup dried lentils
  • 2 cups water
  • 1 tablespoon olive oil
  • 1/2 onion, diced
  • 2 cloves garlic, minced
  • 1/2 teaspoon paprika
  • 1/2 teaspoon cumin
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 cup breadcrumbs
  • 1/4 cup grated parmesan cheese
  • 1 egg, beaten

Instructions:

  1. Rinse lentils thoroughly with cold water and drain. Add lentils to a pot with 2 cups of water and bring to a boil. Reduce heat to low and simmer, covered, for about 20-25 minutes or until lentils are cooked through and tender.
  2. While the lentils are cooking, heat olive oil in a skillet over medium heat. Add onion and garlic and sauté for 3-4 minutes or until the onion is translucent.
  3. Add paprika, cumin, salt, and black pepper to the onion mixture and stir to combine. Remove from heat.
  4. Once the lentils are cooked, drain any excess water and add the lentils to the skillet with the onion and spice mixture. Mix well and let cool for 5-10 minutes.
  5. Preheat oven to 375°F.
  6. Add breadcrumbs, parmesan cheese, and beaten egg to the lentil mixture and stir to combine.
  7. Using a tablespoon, form small patties with the lentil mixture and place them on a baking sheet lined with parchment paper.
  8. Bake for approximately 20-25 minutes or until the patties are golden brown and crispy on the outside.
