Spicy Verrines with Prawns and Avocado Cream
Ingredients:
- 500g raw prawns, peeled and deveined
- 3 avocados, ripe and mashed
- 1 small red onion, finely chopped
- 3 tbsp olive oil
- 1 red chili, finely chopped
- 1 garlic clove, finely chopped
- 1 lime, juiced
- Salt and pepper to taste

- Divide the avocado cream evenly among four serving glasses or verrines.
- Spoon the cooked prawns on top of the avocado cream layer.
- Garnish with coriander leaves and serve immediately.
