Spicy Verrines with Prawns and Avocado Cream

Ingredients:

  • 500g raw prawns, peeled and deveined
  • 3 avocados, ripe and mashed
  • 1 small red onion, finely chopped
  • 3 tbsp olive oil
  • 1 red chili, finely chopped
  • 1 garlic clove, finely chopped
  • 1 lime, juiced
  • Salt and pepper to taste
  • Coriander leaves, for garnishing

Instructions:

  1. In a frying pan, heat olive oil over medium-high heat. Add red chili and garlic, and sauté for 1-2 minutes until fragrant.
  2. Add the prawns to the pan and cook for 3-5 minutes until they start turning pink and are cooked through. Remove the pan from the heat and let the prawns cool.
  3. In a mixing bowl, combine mashed avocados, chopped red onion, lime juice, salt and pepper until the mixture is smooth and creamy.
  4. Divide the avocado cream evenly among four serving glasses or verrines.
  5. Spoon the cooked prawns on top of the avocado cream layer.
  6. Garnish with coriander leaves and serve immediately.
