Butternut Velouté Recipe with Cook Expert

Ingredients:

  • 1 butternut squash, peeled and cubed
  • 1 onion, chopped
  • 2 garlic cloves, minced
  • 4 cups chicken or vegetable broth
  • 1 cup heavy cream
  • 2 tbsp butter
  • Salt and pepper to taste
  • Fresh thyme and croutons for serving

Instructions:

  1. Preheat the Cook Expert to 200°C.
  2. Add the cubed butternut squash to the Cook Expert’s bowl and pulse until finely chopped. Transfer the butternut squash to a bowl and set aside.
  3. Add the chopped onion and minced garlic to the Cook Expert’s bowl. Pulse a few times until the onion and garlic are finely chopped.
  4. Add the butter to the Cook Expert’s bowl and cook on low heat for 3 minutes until the mixture is softened.
  5. Add the chopped butternut squash back to the Cook Expert’s bowl and mix well with the onion and garlic.
  6. Add the chicken or vegetable broth, salt, and pepper to the Cook Expert’s bowl and cook on low heat for 40 minutes.
  7. Add the heavy cream to the Cook Expert’s bowl and puree until smooth.
  8. Adjust the seasoning with additional salt and pepper to taste.
  9. Divide the soup between bowls and garnish with fresh thyme and croutons before serving.
