Spinach, Mushroom and Salami Lasagna Recipe
Ingredients:
- 1 pound lasagna noodles, cooked al dente according to package instructions
- 1 pound fresh spinach, chopped
- 1 pound mushrooms, sliced
- 1/2 pound salami, diced
- 2 cups ricotta cheese
- 2 cups shredded mozzarella cheese
- 1/2 cup grated Parmesan cheese
- 1/4 cup chopped fresh basil
- 2 cloves garlic, minced
- 1/4 cup olive oil
- Salt and pepper to taste
Instructions:
- Preheat the oven to 375°F.
- Heat olive oil in a large skillet over medium heat. Add garlic and cook until fragrant, about 1 minute.
- Add mushrooms and cook until tender, about 5 minutes.
- Add spinach and cook until wilted, about 3 minutes.
- In a separate bowl, combine ricotta, 1 cup of mozzarella, Parmesan, basil, salt, and pepper.
- Grease a 9×13 inch baking dish. Spread a thin layer of the ricotta mixture on the bottom of the dish.
- Add a layer of noodles, followed by a layer of the spinach mixture and a layer of diced salami.
- Spread another layer of the ricotta mixture over the top and repeat until all ingredients are used up.
- Top with 1 cup of mozzarella cheese.
- Cover with foil and bake for 25 minutes.
- Remove foil and bake an additional 10 minutes, or until cheese is melted and bubbly.
- Let cool for a few minutes before slicing and serving.
