Spinach, Mushroom and Salami Lasagna Recipe

Ingredients:

  • 1 pound lasagna noodles, cooked al dente according to package instructions
  • 1 pound fresh spinach, chopped
  • 1 pound mushrooms, sliced
  • 1/2 pound salami, diced
  • 2 cups ricotta cheese
  • 2 cups shredded mozzarella cheese
  • 1/2 cup grated Parmesan cheese
  • 1/4 cup chopped fresh basil
  • 2 cloves garlic, minced
  • 1/4 cup olive oil
  • Salt and pepper to taste

Instructions:

  1. Preheat the oven to 375°F.
  2. Heat olive oil in a large skillet over medium heat. Add garlic and cook until fragrant, about 1 minute.
  3. Add mushrooms and cook until tender, about 5 minutes.
  4. Add spinach and cook until wilted, about 3 minutes.
  5. In a separate bowl, combine ricotta, 1 cup of mozzarella, Parmesan, basil, salt, and pepper.
  6. Grease a 9×13 inch baking dish. Spread a thin layer of the ricotta mixture on the bottom of the dish.
  7. Add a layer of noodles, followed by a layer of the spinach mixture and a layer of diced salami.
  8. Spread another layer of the ricotta mixture over the top and repeat until all ingredients are used up.
  9. Top with 1 cup of mozzarella cheese.
  10. Cover with foil and bake for 25 minutes.
  11. Remove foil and bake an additional 10 minutes, or until cheese is melted and bubbly.
  12. Let cool for a few minutes before slicing and serving.
