Spinach Soup Recipe

Ingredients:

  • 1 tbsp butter
  • 1 onion, chopped
  • 1 garlic clove, minced
  • 4 cups chicken broth
  • 4 cups fresh spinach, chopped
  • 1 tsp salt
  • 1/4 tsp black pepper
  • 1/4 tsp ground nutmeg
  • 1 cup heavy cream

Instructions:

  1. In a large pot, melt butter over medium heat. Add chopped onion and minced garlic and sauté until tender, about 5 minutes.
  2. Add chicken broth and chopped spinach and bring to a boil. Reduce heat and simmer for 10 minutes, or until the spinach is wilted and tender.
  3. Remove from heat and use an immersion blender to puree the soup until smooth. If you don’t have an immersion blender, you can carefully transfer the soup to a blender and blend until smooth, then return to the pot.
  4. Stir in salt, black pepper, and ground nutmeg. Add heavy cream and stir until combined.
  5. Return the pot to medium heat and cook until heated through, about 5 minutes.
