Split Pea Soup Recipe
Ingredients:
- 1 pound dried green split peas, rinsed and drained
- 1 large onion, chopped
- 3 cloves garlic, minced
- 2 carrots, peeled and chopped
- 2 stalks celery, chopped
- 1 bay leaf
- 1 teaspoon dried thyme
- Salt and pepper to taste
- 8 cups vegetable or chicken broth
- 2 tablespoons olive oil
Instructions:
- Heat olive oil in a large pot over medium heat. Add onion, garlic, carrots, and celery and saute until onion is soft and translucent.
- Add split peas, bay leaf, thyme, salt, pepper, and chicken broth. Bring to a boil then reduce to a simmer.
- Cover and let simmer for about 1 1/2 hours or until peas are soft and soup is thickened.
- Remove bay leaf from soup. Puree soup with an immersion blender or transfer to a blender and puree until smooth.
- Adjust seasoning as necessary and serve hot with crusty bread or crackers.
