Split Pea Soup Recipe

Ingredients:

  • 1 pound dried green split peas, rinsed and drained
  • 1 large onion, chopped
  • 3 cloves garlic, minced
  • 2 carrots, peeled and chopped
  • 2 stalks celery, chopped
  • 1 bay leaf
  • 1 teaspoon dried thyme
  • Salt and pepper to taste
  • 8 cups vegetable or chicken broth
  • 2 tablespoons olive oil

Instructions:

  1. Heat olive oil in a large pot over medium heat. Add onion, garlic, carrots, and celery and saute until onion is soft and translucent.
  2. Add split peas, bay leaf, thyme, salt, pepper, and chicken broth. Bring to a boil then reduce to a simmer.
  3. Cover and let simmer for about 1 1/2 hours or until peas are soft and soup is thickened.
  4. Remove bay leaf from soup. Puree soup with an immersion blender or transfer to a blender and puree until smooth.
  5. Adjust seasoning as necessary and serve hot with crusty bread or crackers.
