Sunday Evening Savory Tart

Ingredients:

  1. 1 pie crust (homemade or store-bought)
  2. 5 eggs
  3. 1/2 cup whole milk or heavy cream
  4. 1/2 cup shredded cheddar cheese
  5. 1/2 cup diced tomatoes
  6. 1/2 cup diced red bell pepper
  7. 1/2 cup diced yellow onion
  8. 2 cloves garlic, minced
  9. 1 tsp salt
  10. 1/2 tsp black pepper
  11. 1 tsp dried thyme
  12. 2 tbsp olive oil

Instructions:

  1. Preheat the oven to 375°F.
  2. Roll out the pie crust and place it into a 9-inch tart pan. Trim the excess crust from the edges and prick the bottom with a fork.
  3. In a large skillet, heat the olive oil over medium-high heat. Add the diced onion and sauté for 3-4 minutes until softened.
  4. Add the diced red bell pepper and sauté for 2-3 minutes until softened.
  5. Add the minced garlic and sauté for 30 seconds until fragrant.
  6. Add the diced tomatoes and cook for 1-2 minutes until softened. Remove from heat and set aside.
  7. In a medium bowl, whisk together the eggs, whole milk or heavy cream, shredded cheddar cheese, salt, black pepper, and dried thyme.
  8. Add the sautéed vegetables to the egg mixture and stir to combine.
  9. Pour the egg mixture into the prepared tart pan and smooth out the top.
  10. Bake the tart for 35-40 minutes until the filling is set and the crust is golden brown.
  11. Remove from the oven and let cool for 10-15 minutes before slicing and serving.
