Sunday Evening Savory Tart
Ingredients:
- 1 pie crust (homemade or store-bought)
- 5 eggs
- 1/2 cup whole milk or heavy cream
- 1/2 cup shredded cheddar cheese
- 1/2 cup diced tomatoes
- 1/2 cup diced red bell pepper
- 1/2 cup diced yellow onion
- 2 cloves garlic, minced
- 1 tsp salt
- 1/2 tsp black pepper
- 1 tsp dried thyme
- 2 tbsp olive oil
Instructions:
- Preheat the oven to 375°F.
- Roll out the pie crust and place it into a 9-inch tart pan. Trim the excess crust from the edges and prick the bottom with a fork.
- In a large skillet, heat the olive oil over medium-high heat. Add the diced onion and sauté for 3-4 minutes until softened.
- Add the diced red bell pepper and sauté for 2-3 minutes until softened.
- Add the minced garlic and sauté for 30 seconds until fragrant.
- Add the diced tomatoes and cook for 1-2 minutes until softened. Remove from heat and set aside.
- In a medium bowl, whisk together the eggs, whole milk or heavy cream, shredded cheddar cheese, salt, black pepper, and dried thyme.
- Add the sautéed vegetables to the egg mixture and stir to combine.
- Pour the egg mixture into the prepared tart pan and smooth out the top.
- Bake the tart for 35-40 minutes until the filling is set and the crust is golden brown.
- Remove from the oven and let cool for 10-15 minutes before slicing and serving.
