Tagine with Quince Recipe
Ingredients:
- 2 lbs lamb, cut into chunks
- 2 large onions, chopped
- 3 garlic cloves, minced
- 1 tsp ground ginger
- 1 tsp ground cumin
- 1 tsp paprika
- 1 tsp ground turmeric
- 2 cinnamon sticks
- 1 cup chicken broth
- 1 cup water
- 2 quinces, peeled, cored and quartered
- 1 tbsp honey
- Salt and pepper to taste
- 2 tbsp olive oil
- Chopped fresh parsley or cilantro for garnish
Instructions:
- Season the lamb with salt and pepper and set aside.
- Heat the olive oil in a tagine over medium heat. Add the onions and garlic and cook till tender.
- Add the lamb and cook till browned on all sides.
- Add the spices (ginger, cumin, paprika, turmeric, and cinnamon sticks) and cook for 2-3 minutes or until fragrant.
- Pour in chicken broth and water. Bring to a boil, reduce heat to low, cover and let simmer for 1 hour.
- Place the quince slices on top of the lamb, cover and let simmer for an additional 30 minutes or until the lamb and quince are tender.
- Drizzle honey over the quince slices and cook for an additional 10 minutes uncovered.
- Garnish with chopped parsley or cilantro before serving.
