Tagine with Quince Recipe

Ingredients:

  • 2 lbs lamb, cut into chunks
  • 2 large onions, chopped
  • 3 garlic cloves, minced
  • 1 tsp ground ginger
  • 1 tsp ground cumin
  • 1 tsp paprika
  • 1 tsp ground turmeric
  • 2 cinnamon sticks
  • 1 cup chicken broth
  • 1 cup water
  • 2 quinces, peeled, cored and quartered
  • 1 tbsp honey
  • Salt and pepper to taste
  • 2 tbsp olive oil
  • Chopped fresh parsley or cilantro for garnish

Instructions:

  1. Season the lamb with salt and pepper and set aside.
  2. Heat the olive oil in a tagine over medium heat. Add the onions and garlic and cook till tender.
  3. Add the lamb and cook till browned on all sides.
  4. Add the spices (ginger, cumin, paprika, turmeric, and cinnamon sticks) and cook for 2-3 minutes or until fragrant.
  5. Pour in chicken broth and water. Bring to a boil, reduce heat to low, cover and let simmer for 1 hour.
  6. Place the quince slices on top of the lamb, cover and let simmer for an additional 30 minutes or until the lamb and quince are tender.
  7. Drizzle honey over the quince slices and cook for an additional 10 minutes uncovered.
  8. Garnish with chopped parsley or cilantro before serving.
