Tartiflette Pasta Recipe

Ingredients

  • 1 lb pasta
  • 4 slices of bacon, chopped
  • 1 onion, chopped
  • 2 cloves of garlic, minced
  • 1 tbsp olive oil
  • 2 cups of heavy cream
  • 1/2 lb Reblochon cheese, diced
  • Salt and pepper to taste

Instructions

  1. In a large pot, bring salted water to a boil. Cook pasta according to package directions until al dente.
  2. In a large skillet, cook bacon over medium heat until crispy, about 5 minutes. Remove with a slotted spoon and set aside.
  3. Add onion to the bacon grease and sauté until translucent, about 5 minutes, then add garlic and cook for about 1 minute longer.
  4. Remove onions and garlic from skillet and set aside.
  5. Return skillet to medium heat and add olive oil. Once heated, stir in heavy cream and allow to simmer gently for 10-15 minutes.
  6. Stir in diced cheese and allow to melt completely, stirring occasionally. When cheese has melted, remove from heat and season with salt and pepper to taste.
  7. Drain the pasta and mix it with the creamy cheese sauce, onions and bacon. Toss until pasta is evenly coated.
  8. Serve warm and enjoy!
