Smoked Salmon Risotto

Ingredients:

  • 1 cup Arborio rice
  • 4 cups chicken or vegetable broth
  • 1/2 cup white wine
  • 1/2 cup grated Parmesan cheese
  • 1/2 cup diced onion
  • 1/2 cup chopped smoked salmon
  • 2 tbsp. butter
  • 2 garlic cloves, minced
  • Salt and pepper to taste

Instructions:

  1. In a large saucepan, heat the chicken or vegetable broth over medium heat and keep it simmering throughout the cooking process.
  2. In a separate large saucepan, heat 2 tablespoons of butter over medium-high heat. Add the onions and garlic and sauté for 3-4 minutes, or until the onions are translucent.
  3. Add the Arborio rice to the saucepan and stir for 2-3 minutes, or until the rice is coated in the butter and slightly toasted.
  4. Pour the white wine into the saucepan and stir until the liquid is absorbed.
  5. Begin adding the hot broth to the rice, one ladleful at a time, stirring continuously until the liquid is absorbed before adding more. Repeat this process until the rice is creamy and al dente, with a slight bite to it. This will take approximately 18-20 minutes.
  6. Add the smoked salmon and stir to combine. Cook for 2-3 minutes, or until the salmon is heated through.
  7. Add grated Parmesan cheese and stir to combine. Season the risotto with salt and pepper to taste.
  8. Remove the saucepan from heat and let it sit for 1-2 minutes to allow the risotto to thicken.
  9. Serve the smoked salmon risotto hot, garnished with fresh parsley and additional Parmesan cheese, if desired.
