Smoked Salmon Risotto
Ingredients:
- 1 cup Arborio rice
- 4 cups chicken or vegetable broth
- 1/2 cup white wine
- 1/2 cup grated Parmesan cheese
- 1/2 cup diced onion
- 1/2 cup chopped smoked salmon
- 2 tbsp. butter
- 2 garlic cloves, minced
- Salt and pepper to taste
Instructions:
- In a large saucepan, heat the chicken or vegetable broth over medium heat and keep it simmering throughout the cooking process.
- In a separate large saucepan, heat 2 tablespoons of butter over medium-high heat. Add the onions and garlic and sauté for 3-4 minutes, or until the onions are translucent.
- Add the Arborio rice to the saucepan and stir for 2-3 minutes, or until the rice is coated in the butter and slightly toasted.
- Pour the white wine into the saucepan and stir until the liquid is absorbed.
- Begin adding the hot broth to the rice, one ladleful at a time, stirring continuously until the liquid is absorbed before adding more. Repeat this process until the rice is creamy and al dente, with a slight bite to it. This will take approximately 18-20 minutes.
- Add the smoked salmon and stir to combine. Cook for 2-3 minutes, or until the salmon is heated through.
- Add grated Parmesan cheese and stir to combine. Season the risotto with salt and pepper to taste.
- Remove the saucepan from heat and let it sit for 1-2 minutes to allow the risotto to thicken.
- Serve the smoked salmon risotto hot, garnished with fresh parsley and additional Parmesan cheese, if desired.
