Tartiflette Pie

Ingredients

  • 2 lbs. potatoes, peeled and sliced into thin rounds
  • 1 lb. bacon, diced
  • 1 large onion, diced
  • 1 cup heavy cream
  • 1 cup grated Gruyere cheese
  • 1/2 cup grated Parmesan cheese
  • 2 garlic cloves, minced
  • 2 tbsp. butter
  • 2 tbsp. olive oil
  • 1 tsp. salt
  • 1 tsp. black pepper

Instructions

  1. Preheat the oven to 375°F.
  2. In a large pot of boiling salted water, cook the potatoes for 5-7 minutes or until just tender. Drain and set aside.
  3. In a large skillet, cook the bacon over medium heat until crisp. Using a slotted spoon, transfer the bacon to a paper towel-lined plate.
  4. Add the onion to the skillet and cook until soft and translucent.
  5. Add the garlic and cook for another minute, then remove from heat.
  6. In a small bowl, whisk together the heavy cream, Gruyere cheese, Parmesan cheese, salt, and black pepper.
  7. In a 10-inch ovenproof skillet, melt the butter and olive oil over medium heat.
  8. Layer half of the cooked potatoes in the skillet. Top with half of the bacon and onion mixture, then half of the cream mixture.
  9. Add the remaining potatoes, then top with the remaining bacon, onion mixture, and cream mixture.
  10. Cover the skillet with foil and bake for 30 minutes.
  11. Remove the foil and bake for an additional 15-20 minutes or until the top is golden brown and bubbly.
  12. Let cool for a few minutes, then serve.
