Thermomix Fish Sauce Recipe

Ingredients:

  • 500g fish bones, rinsed and dried
  • 1 large onion, chopped
  • 2 medium-sized carrots, peeled and chopped
  • 2 celery sticks, chopped
  • 2 garlic cloves, crushed
  • 2 bay leaves
  • 1 tsp black peppercorns
  • 2 tbsp olive oil
  • 1 tbsp tomato paste
  • 1 tbsp soy sauce
  • 1 lemon, juiced
  • 1.5 litres water

Instructions:

  1. Preheat the oven to 200°C.
  2. Place the fish bones on a baking tray and roast in the oven for about 20 minutes, until they are golden brown.
  3. Heat the olive oil in a large saucepan over medium heat. Add the chopped onion, carrots, celery, garlic, bay leaves, and peppercorns.
  4. Cook for about 10 minutes, stirring occasionally until the vegetables have softened.
  5. Add the roasted fish bones to the saucepan and stir in the tomato paste, soy sauce, lemon juice, and water.
  6. Bring the mixture to a boil, then reduce the heat to low and leave to simmer for about 1 hour.
  7. Remove the saucepan from the heat and allow to cool slightly.
  8. Scoop out the fish bones and discard them, then strain the sauce through a fine mesh strainer into a clean saucepan.
  9. Return the saucepan to the stove and bring the sauce to a gentle simmer for about 20 minutes, until it has reduced and thickened slightly.
  10. Remove the saucepan from the heat and allow the fish sauce to cool to room temperature.
  11. Transfer the fish sauce to a sterilised bottle or jar and store it in the fridge for up to 2 weeks.
