Thermomix Fish Sauce Recipe
Ingredients:
- 500g fish bones, rinsed and dried
- 1 large onion, chopped
- 2 medium-sized carrots, peeled and chopped
- 2 celery sticks, chopped
- 2 garlic cloves, crushed
- 2 bay leaves
- 1 tsp black peppercorns
- 2 tbsp olive oil
- 1 tbsp tomato paste
- 1 tbsp soy sauce
- 1 lemon, juiced
- 1.5 litres water
Instructions:
- Preheat the oven to 200°C.
- Place the fish bones on a baking tray and roast in the oven for about 20 minutes, until they are golden brown.
- Heat the olive oil in a large saucepan over medium heat. Add the chopped onion, carrots, celery, garlic, bay leaves, and peppercorns.
- Cook for about 10 minutes, stirring occasionally until the vegetables have softened.
- Add the roasted fish bones to the saucepan and stir in the tomato paste, soy sauce, lemon juice, and water.
- Bring the mixture to a boil, then reduce the heat to low and leave to simmer for about 1 hour.
- Remove the saucepan from the heat and allow to cool slightly.
- Scoop out the fish bones and discard them, then strain the sauce through a fine mesh strainer into a clean saucepan.
- Return the saucepan to the stove and bring the sauce to a gentle simmer for about 20 minutes, until it has reduced and thickened slightly.
- Remove the saucepan from the heat and allow the fish sauce to cool to room temperature.
- Transfer the fish sauce to a sterilised bottle or jar and store it in the fridge for up to 2 weeks.
