Thermomix Risotto Recipe

Ingredients

  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 400g Arborio rice
  • 100ml white wine
  • 1 litre chicken or vegetable stock
  • 100g grated parmesan cheese
  • 50g butter
  • Salt and pepper to taste

Directions

  1. Place the onion in the Thermomix bowl and chop for 5 seconds on speed 5. Scrape down the sides of the bowl.
  2. Add the garlic and sauté for 2 minutes on speed 1 at 100C.
  3. Add the Arborio rice and stir for 1 minute on speed 1 at 100C.
  4. Pour in the white wine and stir for 2 minutes on speed 1 at 100C until it has been absorbed by the rice.
  5. Add the chicken or vegetable stock and cook for 18-20 minutes on speed 1 at 100C until the rice is cooked and the liquid has been absorbed.
  6. Add the grated parmesan cheese and butter and stir for 1 minute on speed 2 at 80C.
  7. Season with salt and pepper to taste and serve hot.
